Avial



Ingredients:

1. Carrot - 1/4 Cup(Cut Veg)
2. Beans - 1/4 Cup(Cut Veg)
3. Peas - 1/4 Cup
4. Potato - 1/4 Cup(Cut Veg)
5. Drumstick - 1(Cut in to small pieces)
6. Plantain - 1/4 Cup(Cut Veg)
7. Onion - 1/4Cup(Finely chopped)
8. Green Chilly - 3 or 4
9. Coconut - 1 Cup
10. Cumin Seeds - 2 tsp
11. Turmeric powder - 1 tsp
12. Salt - Needed qty
13.Yogurt/Curd - 2 tsp
14.Coconut oil - 1 tsp
15.Veg oil - 2 tsp
16.Mustard - 1 tsp
17.Curry leaf - small qty
18.Coriander leaf - Small qty(Chopped)

Procedure:

1. Cut carrot, beans, potato, drumstick, onion and plantain. Pressure cook all the cut vegetables with salt and turmeric powder for one whistle.
2. Meanwhile, grind the coconut, chillies and cumin seeds to a paste. Keep aside.
3. In a pan, heat oil and splutter mustard. Now add cooked vegetables and then ground coconut mixture.
4. Mix well and allow it to cook in a medium flame for about 5 minutes.
5.A dd coconut oil and curry leaf, mix well and turn of the stove.
6. Once it is cooled down, add yogurt/curd and mix well.
7. Garnish with Coriander.
8. Serve with adai/rice.
