Lemon Rice / Elumichai Sadam / எலுமிச்சை சாதம்

This is a best lunch box recipe. Lemon rice is very easy and quick to prepare. 

Ingredients :

1. Rice - 3 Cups (Cooked and Cooled to Room Temperature)
2. Lemon - 1 (Medium Sized)
3. Green Chilly - 2 or Adjust to your taste (Slit Vertically)
4. Ginger - 1 inch piece (Chopped Finely)
5. Turmeric Powder - 1/4 tsp or Add to your preference
6. Mustard - 1 tsp
7. Channa Dhal - 1 tsp
8. Asafoetida - 1/4 tsp
9. Curry Leaves - A Few
10. Oil - 1/2 tbs
11. Salt - Needed Qty

Procedure :

1. Heat oil in a pan. Splutter mustard. Medium the flame.

2. Add channa dhal, green chilly, ginger and asafoetida. Fry till channa dhal turns golden brown.

3. Add curry leaves and turmeric powder. Saute for few minutes.

4. Switch off the stove. Add lemon juice.

5. Pour this mixture over the rice. Add salt. Combine everything together.

6. Add lemon and salt according to your taste.
